Every sweet on the stand is built to match coffee's intensity. A melon sandwich layered with herbed compote and butter cream catches the eye with its striking cross-section.
A roll cake wraps mango, pineapple and passion fruit into something bright and tropical. Caramel banana mousse gets its depth from dark brown sugar, while a coconut-citrus cake brings a summery tartness. Together, five sweets that shift the conversation from dessert to pairing.
The savoury tier is full of surprises. A mackerel mille-feuille arrives with a delicate tuile shaped like a fish bone. Corn cake salé plays sweet against salty. Edamame hummus is plated garden-style with seasonal greens.
The standout may be the croque monsieur in a glass — a chilled fondue of Emmental and Gruyère, served with bread and ham, unexpectedly perfect alongside a strong coffee.
All three pairing drinks come from Ogawa Coffee, a Kyoto roaster with roots going back to 1952. The non-alcoholic mocktail blends espresso with the floral lift of elderflower — the kind of drink you would expect from a hotel bar, not an afternoon tea.
The iced coffee uses organic JAS-certified ethical beans, with roasted-nut notes and a crisp, clean finish. The hot coffee features Orangutan Coffee certified* beans, offering warm clove and caramel undertones.
